In this talk, Dr. Arzum Akkas discusses findings from two complementary research papers that focus on management of perishable inventory at distribution centers. The findings guide managers about their inventory issuing decisions considering the food waste impact in the downstream supply chain.
Dr. Akkas is an assistant professor at Boston University’s Questrom School of Business. She has Ph.D. from MIT in Engineering Systems, a Master's degree from MIT in Supply Chain Management, and a Bachelor’s degree from Istanbul Technical University in Industrial Engineering. Before becoming a research academic, Dr. Akkas was a management consultant at the leading strategy and operations firm Archstone Consulting. Prior to that she was an operations manager at PepsiCo, and was a business systems consultant for the supply chain software firm JDA
